Vegetarian Portobello Mushrooms

It is a true sign that summer has finally arrived when you can go into the garden, to the beach or to a park and grill food outside with your family. If you are vegetarian, you should never let that stop you from grilling along with everyone else – in fact, cooking vegetables is one of the most delicious ways to prepare them. Here is a recipe for a delicious vegetarian burger than can you can easily grill. Make sure you grill any vegetable before you grill meat as meat has some bacteria that you shouldn’t get on your vegetables.

If it is cold outside, or a typical British summer day with lots of rain, don’t worry! You can easily make this burger on the hob as well. If you do cook it on the hob, add a few minutes to the cooking time, as a grill will usually be warmer than a hob.

Directions

Every time you have finished cooking a part of your burger, you can wrap it in aluminium wrapping to make sure it stays hot while you cook the rest.

Slice your tomatoes, cucumber, onion, salad or any other vegetable you would like in your burger and set it aside.

Grill your burger buns until they are golden on both sides. Bread burns easily, so watch it closely to make sure you don’t burn it.

Twist the stalk of the mushroom until it comes off the cap. Gently rinse the cap to remove any dirt. After you have rinsed it, you can use some paper towel to remove any residue water to make sure your mushroom does not turn watery when grilled. Grill the mushroom for approximately 4-5 minutes on each side until it is hot all the way through. Remember that cooking times, especially when grilling, tend to vary and you have to watch your food to make sure it doesn’t cool too little or too much.

While the mushroom is cooking on the grill, cut a block of Halloumi into slices and grill the slices for 2 to 3 minutes, until both sides are golden and crispy. Halloumi has a very special taste and texture, and if you don’t like it you can easily switch it for other cheeses, such as mozzarella and cheddar cheese.

When both the mushroom and halloumi are done cooking, you are ready to assemble your burger. If you are cooking for someone else than just yourself, it is a good idea to keep all the ingredients separate so people can chose themselves which ingredients they would like to have in their burgers and which they do not.

You can have the burger with roasted vegetables or a fresh salad. A nice salad for this could be salad leaves (any kind you like), sliced tomato and cucumber, grated carrot and Cesar dressing.
