Recipe: Scones

However you pronounce them, Scones (which are pronounced differently in the South and North of the UK), are a delicious, British afternoon cake. They are especially delicious with clotted cream and jam, and I have no doubt that your parents or grandparents would be very grateful to find these presented on the table.

Ingredients:

350g self-raising flour

¼ teaspoon salt

1 teaspoon baking powder

85 g butter, cut into cubes

3 tablespoons caster sugar

175 ml milk

1 teaspoon vanilla extract

A squeeze of lemon juice

1 beaten egg

Jam and clotted cream (to serve on your delicious scones)

Preheat the oven to 220 degrees. In a bowl, mix the flour with the salt and baking powder. Add the butter cubes, then use your fingers to rub all of this together. Keep mixing with your hands until the mix look like small crumbs. Now use a spoon or a fork to mix in the sugar.

Heat the milk in a microwave for 30 seconds until warm, but make sure it is not too hot. Beware as the microwave heats quickly and you only have to be inattentive for a few seconds for the milk to become too hot. Add the vanilla and lemon juice to the warm milk.

Put a baking sheet in the over.

In the bowl with the flour and sugar, make a little hole in the middle with your hands. Now pour the wet ingredients you have in the other bowl into this hole. With a fork, quickly mix the two.

Use a working surface for the next step, but be sure to tell your parents and ask their permission as this may get a little messy. When they have said yes, spread some flour out on the table, and then pour your mix on to this part of the table. Pour a little more flour on top of the dough, and rub some between your hands. Now fold the dough over itself three or four times. After that, try to see if you can get it to look like a big circle that is about 4 cm thick.

Use a cutter of about 5 cm dipped in flour to cut out four scones. Take the dough and make it round again and then make another 4 scones. Brush the tops with a little beaten eggs, to make them look shiny and to make them bake better. Very, very carefully and with the help of your parents, place the scones onto the baking tray.

Bake for 10 minutes in the oven, until they are risen and golden on the top. You can eat these right away while they are still warm, or if you can bear it, let them cool down and eat them with as much jam and clotted cream as possible. If you do not want to eat them right away, ask your parents for help to freeze them so you can eat them on another day.
