Summer is nearly over, meaning that we will soon be back at school. A little shocked by the amount of knowledge we’ve apparently forgotten over summer, as well as the calorie-busting, leave-you-wheezing exercises which each and every gym teacher has spent their break designing to personally torture their students. Or, you know, get them in shape. As it’s our last chance to indulge, I would recommend one of the most deliciously decadent desserts of cakey goodness I have ever had: The Oreo cookie brownie. It tastes as amazing as it sounds. Make sure that you have a lot of hungry people nearby whilst baking as the recipe makes a lot, but they don’t keep for too long. More importantly, enjoy!
Ingredients
Cookie Base
110 grams of Butter
110 grams of Castor sugar
65 grams of Brown sugar
1 Egg
½ teaspoon of Vanilla extract
275 grams Plain flour
½ teaspoon of Baking powder
100 grams of Chocolate chips
2 packets of Oreos
Brownie Mix
115 grams of Dark chocolate
225 grams of Unsalted butter
350 grams of Sugar
4 Eggs
50 grams of Plain flour
½ teaspoon of Vanilla extract
Method
Setting Up- To make sure the layers bake together, we need to prepare each individually. Begin by preheating the oven to 180 degrees (ask an adult for help), and line a rectangular cake tin (preferably 20cm X 30 cm, but it doesn’t have to be exact) with greasproof paper, using butter to help it stick. Make sure that it covers the sides of the tin too, as the brownie mix may stick.
Cookie Base - Cream the butter and the sugars together in a large bowl, until you have a light brown, consistent mixture with no lumps. Make sure that no mixture gets left on the side! Then, fold in the egg and vanilla extract, making sure that everything is evenly mixed. Next, sieve in the flour and baking powder, ensuring that it is incorporated. Now for the fun bit! Pour in the chocolate chips, and mix them in using your hands. When they’re evenly spread, knead the dough into the base of the tin, ensuring it reaches the corners, and is level. Now, place the Oreo cookies in rows ontop of the cookie dough.
Brownie Mix - For this next bit, you’ll need a grown up too! Chop up the chocolate, into approximately three pieces per square, and add it to the butter in a small glass bowl. Next, place the bowl over some boiling water in a saucepan, and allow it too melt, occasionally mixing it with a spoon. When that’s done, remove the bowl from the heat, and pour away the boiling water, putting the chocolate butter mixture to one side. Pour the sugar into a big bowl, and add the chocolate and butter, stirring well. Next, incorporate the vanilla extract, and eggs, before sieving in the flour too. Mix well, until it’s reached dropping consistency, and then, very very carefully, pour over the Oreos and cookie batter base, until they are both covered well. Place in the preheated oven, reduce it’s tempertature to 160 degrees, and cook for 40 minutes.
When the brownies are done, remove them, leave them to cool, and then cut them into squares, with approximately one Oreo per brownie. Enjoy!
