One-pan Vegetarian Sloppy Joe's

- 2 small onions or one big, cut into cubes

- 4 small carrots, cut length-way and then into half moon shapes.

- Cooking oil

- 200 g mushrooms, finely chopped

- Salt and pepper to taste

- 2 bell peppers, cut into ½ inch squares.

- 150 g barbecue sauce

- 150 g ketchup

- 1-2 tablespoon water

- 2-4 burger buns

- salad

 

Sloppy Joe’s is a typically American dish, which originated in the Southern states. It typically contains meat, but this vegetarian alternative is at good as any meat version I have ever had. For this recipe you will need only a cutting board, a knife, a hand blender and a pan – so that’s less dishes for you to clean!

Start by taking the two small onions that you have cut into cubes and adding them, along with the cut-up carrots, to a pan with a little oil in it (preferably rice-bran oil, which you can healthily heat to a very high temperature). Fry the vegetables at high heat until they start to sizzle, and then lower the heat to medium. Make sure the vegetables don’t burn or go brown, you just want them to be heated enough to make the onions turn a little see-through and soft. When they are soft, add the chopped mushrooms and keep it on the heat until they are brown. Keep stirring to make sure the vegetables are heated evenly. Finally, when the mushrooms are browned, push all the vegetables to one side of the pan and push the pan a little to the side of the hob, so one side of the pan is no longer on the hot part of the hob. In the part of the pan that is still on the heat and which now has no vegetables in it, add the bell peppers and heat until they start to turn golden brown.

When all the vegetables have been heated, move the pan into the middle  of the hob again, so the whole pan gets heat. Add the barbecue sauce and the ketchup and 1 to 2 tablespoons of water. Turn down the heat and let the whole dish simmer for 10 minutes, then take it off the heat.

Add two thirds of the mix to a bowl and blend it with the hand blender. If you like the sauce completely smooth, bland the whole mix. Either way don’t bland it for too long – it is more authentic and tastes better if it is not just a big sauce, but actually has pieces of vegetables in it. When you’re blending it be careful as a little sauce may spray up and ensure that your parents have approved your use of the blender before you use it.

Finally, heat the burger buns in the oven or over a toaster according to the packaging of the specific burger buns you got. When they are done, you can assemble your sloppy Joe’s by adding a few spoonful’s of the vegetable sauce-mix to the burger buns and adding a little salad, before digging in. Enjoy!
