Oat, Raisin and Apricot Cookies

Ingredients:-

250g Butter

175g Soft Brown Sugar

175g Self-Raising Flour

225g Porridge Oats

175g Apricots

50g Raisin

 

Method:-

- Heat the oven to 160C for a fan oven. Line two large baking sheets with baking parchment or lightly grease them.

- Mix the butter and sugar with a wooden spoon until the mixture is light and fluffy. Stir in the flour and oats and mix them in well.

- Then mix in the apricots and raisins. Then cut the mixture into 20 equal pieces, rolling each one into a ball.

- Place the balls on to the baking tray, spaced evenly apart. Then flatten them slightly with your fingers. Bake them for 15-20 minutes until they are pale gold around the edges, but soft in the centre.

- Cool for 15 minutes.
