My favourite dessert. If you go to any restaurant in France which typically cooks French food, Îles flottantes (literally translated as floating islands) will most likely be on the dessert menu. This dessert will be enjoyed by custard lovers. Even better than custard, this vanilla flavoured dessert is delicious and very easy to make! Also, it is presented in glasses (cocktail-like glasses) therefore the dessert looks sophisticated and very tempting!
Preparation time: 20 minutes
Cooking time: 15 minutes
Ingedients for 4 people:
6 free-range eggs
½ litre of milk
170g sugar + 50g for the caramel
1 vanilla pod, or vanilla essence
A pinch of salt
1) Separate the egg whites from the yolk. Beat the egg whites until snow white, with a whisk preferably. Add a pinch of salt whilst beating them, then add 70g of sugar.
2) Add the milk and the vanilla to a saucepan, and let simmer. Place the beaten egg whites into the mix with a spoon. Leave them for 1 to 2 minutes, turning them round every now and then. Then take them out and place them onto a sheet of baking paper until needed.
3) Beat the egg yolks, and the rest of the sugar (100g), until the mixture whitens.
4) Place this mixture into the milk (which you have taken the vanilla pod out of) and bring to a boil. Then, leave on a low heat. Once the mixture thickens, and becomes of the consistency of a cream, transfer it to a bowl, and leave to chill.
5) For the caramel, use the 50g of sugar and place it into a saucepan and heat at a low heat until it turns into caramel.
6) You then have the cream which you poor into the glass, and then add an egg white, and to finish pour some caramel on top and it is ready to serve! Also, almonds are a very popular topping which you can add on last if you wish.
Îles flottantes is a very light, but scrumptious dessert, which is very typically French. I urge you to try out this recipe, and to incorporate French cuisine into your day to day cooking! You can also make this recipe in advance, to save time on the night you would like to serve the Îles flottantes.
