Fairy Cakes
Everybody loves cake right?! Well here's an easy peasy recipe for great fun fairy cakes that taste even better than they look! You can decorate your cakes however you like and they are great for enjoying with a group of friends, just make sure an adult helps with the cooking. The most fun is from mixing and decorating anyway!
Ingredients (for the sponge of the cakes)
-110g/4oz butter or margarine softened at room temperature
-110g/4oz caster sugar
- 2 eggs
- 1 teaspoon of vanilla extract
- 110g/4oz of self-raising flour
- 1-2 tablespoons of milk
(For the icing and the tasty toppings!)
- 300g/10 and a half oz icing sugar
- 2-3 tablespoons of water
- 2-3 drops of food colouring
- Whichever sprinkles or tasty toppings you want to complete your cakes, try not to eat too many of the toppings before you put them on your cakes, it is tempting!
Preparation and Cooking
Step 1) Preheat your oven to 180 degrees C/350 degrees F/Gas 4 and line two 12 hole fairy cake tins with paper cases.
Step 2) MIx the butter and sugar together in a bowl until they are pale, then add the eggs gradually not all at once and stir in the vanilla extract too.
Step 3) Add the flour and a little milk until the mixture is soft and then spoon it into the paper cases, filling them all up half way.
Step 4) Bake these in the oven for 10 minutes or until the cakes look golden brown. To test if they are cooked insert a skewer into the cake and it should come out clean. Leave them to cool now for 10 minutes.
Step 5) Time for the icing! Pour the icing sugar into a mixing bowl and stir in enough water so that it becomes a smooth mixture, then stir in the food colouring.
Step 6) Now just add the icing to your cakes and your choice of sprinkles and toppings! Make them creative and enjoy your hard work with a tasty fairy cake, good job!
